春之豐饒,盡藏於此。這道名為「豐」的麵食,是對春季盛產的頌歌。我們從四川擔擔麵的醇厚風味中汲取靈感,將其解構成一道優雅的義大利麵。麵體之下,是經過龍眼木燻烤的臺東九樑豬肋排,肉質軟嫩,帶著梅花椒特有的酥麻尾韻。麵體之上,點綴著以洋蔥湯和12年Casanova巴薩米克醋濃縮而成的黑色晶石,酸甜的滋味巧妙地平衡了肉質的豐腴,最後再淋上果香四溢的阿根廷橄欖油,為這趟味覺之旅畫上完美句點。
An ode to the abundance of spring. Our pasta, “Feng,” translates the richness of the season onto the plate. Drawing inspiration from the bold flavors of Sichuan Dan Dan noodles, we deconstruct and reimagine it as an elegant pasta dish. Beneath a silky sheet of pasta lie tender Taitung Jiuliang pork ribs, smoked over longan wood and seasoned with the tingling whisper of Meihua pepper. The dish is adorned with glistening jewels made from a reduction of onion soup and 12-year-old Casanova Balsamic vinegar, their sweet acidity cutting through the richness of the pork. A final drizzle of fruity Argentine olive oil completes this journey of abundant flavors.
