Chef Anthony draws out the pure, subtle scent of Taiwan cedar—long sacred—by heat-treating the wood beneath wagyu bone, blending tradition with innovation.

Each cedar plank is legally sourced through forest thinning, carefully selected and precisely burned—honoring both flavor and sustainability.

台灣肖楠，冰河時期的孓遺植物，為全球僅存四種肖楠之一，亦是台灣特有種。它在中央山脈的斷崖間，以強韌生命力屹立百年以上。

自古被視為宗教場域的神聖之木，肖楠擁有獨特的天然香氣。在方舟料理中，主廚安東尼以尊重傳統的創新手法，將經過特殊高溫處理的肖楠木置於牛骨下方，這種處理方式使木材釋放出極為細緻的純粹清香。

每一片肖楠木的選用，都經過主廚安東尼的精心計算與嚴格控制，並確保來源為合法疏伐，讓肖楠在餐桌上綻放新生命，也為山林永續盡一份心力。
